Abstract
Penyimpanan pada suhu rendah merupakan salah satu penanganan yang diupayakan untuk menjaga kualitas mangga agar sesuai dengan keinginan dan permintaan pasar. Penelitian ini bertujuan untuk menganalisa perubahan mutu buah mangga arumanis selama penyimpanan dingin. Buah mangga Arumanis dengan umur panen 75 HSBM dan 90 HSBM disimpan pada suhu 8 OC dan 13 OC selama 22 hari dengan pengambilan data 2 hari sekali. Indikator mutu yang diukur perubahannya adalah TPT, total asam, rasio gula asam, susut bobot, dan kekerasan. Hasil penelitian menunjukkan terjadi kenaikan TPT dan susut bobot, kekerasan menurun dan total asam mengalami penurunan yang fluktuatif, sedangkan rasio gula asam cenderung meningkat. Terjadinya perubahan indikator mutu mangga Arumanis selama penyimpanan diharapkan dapat menjadi dasar untuk penanganan buah mangga Arumanis selama peyimpanan dingin agar memperpanjang umur simpan dan mempertahankan mutunya selama penyimpanan.
